Carrots
Our sweet rainbow carrots are not storage carrots so they need to be used within a week for the best flavor and the best part is you do not need to peel them! Don't forget to use the greens for pesto. If you haven't had pickled carrots they are a must try. I like serving them on the side with most meals because they are THAT good.

Storage Tips

If your carrots get a bit wilty, put them in a glass of cold water to rehydrate them for about five minutes.

When roasting carrots it is important to make sure they are cut to a uniform size so they cook evenly.
